Patisserie-Style Cakes
I love using fresh fruits in my cakes as much as possible, working with the seasons.
My bakes are evolving to be patisserie style as I prefer to use fresh cream, mascarpone and cream cheese cheese frostings where possible rather than buttercream and fondant.
I am experimenting and learning new techniques to create modern and bespoke cakes that taste amazing.

Quality, Natural Ingredients
I use quality ingredients, free range eggs and natural whole foods where possible in my cakes - I never use baking spread or margarine, preferring to use real butter, or sunflower oil for oil based cakes.
I use real foods for colour rather than food dyes - freeze dried berries taste amazing and give a more natural colour that is better for us.

Dietary Requirements
I take allergies and dietary requirements very seriously. I regularly bake gluten free cakes and I ensure my kitchen and all equipment is cleaned thoroughly between bakes to prevent cross contamination.
My kitchen is not certified 'gluten free' though so my gluten free cakes are labelled as 'non gluten containing ingredients'.
I have a Level 2 in Allergy Awareness.
